Olive groves, like vineyards and cypress trees, form an intrinsic part of Tuscany’s landscape and history. Olive oil was traditionally essential to everyday life and was highly valued as fuel, a food stuff, for medicinal uses, and for fire wood.

Villa Saletta provides the perfect microclimate for these trees. However the need for extensive manual labour in pruning and care of the trees, and in picking the olives, led to increased difficulty in maintaining the extensive orchards of Villa Saletta. Through the latter part of the last century many trees became absorbed back into the natural forestry and undergrowth of the hills.

Now a new phase has begun at Villa Saletta where these abandoned trees are being brought back into production through clearing of undergrowth and careful pruning. The olives are pressed in the estate's frantoio.

Through attentive care both in the olive groves and throughout the processing of the olives in the olive press, our goal is to produce an olive oil which will be at the pinnacle of quality. Our oil is only available through very selected suppliers or through direct purchase on this website.
